What better way to start the day on Halloween than with pumpkin pancakes. Margaret searched high and low for a recipe this morning, but came up empty. At my suggestion, she winged it and came up with this delicious recipe.
Ten Apple Farm Pumpkin Pancakes
1/2 cup whole wheat
1 cup all purpose flour
1 tsp. salt
1 3/4 tsp. baking powder
3 tablespoons brown sugar
1/4 tsp. ground ginger
1/4 tsp. cinnamon
1/8 tsp. ground cloves
2 eggs
1 cup pumpkin puree (canned pumpkin is fine)
2 tablespoons canola oil
1/2 cup milk

In a large bowl, whisk together all the dry ingredients.
In a separate small bowl, combine eggs, pumpkin puree, oil, and milk.
Pour the liquid ingredients into the dry mixture and stir together. Make sure that you don’t over-mix–it will be a thick batter, and a few lumps are fine. (If the batter seems too thick to you, add a tablespoon or two of milk to thin it out.)
Cook over medium-high heat on a griddle greased with a little melted butter.
