We start our morning goat experiences in the farmhouse kitchen, with coffee and baked treats that include seasonal scones and breads. We’re always happy to accommodate dietary restrictions, and we have a few favorites in our rotations. Just let us know in advance, and we’ll make sure to have something delicious and vegan, or dairy-, gluten-, or nut-free. This dairy-free apple bread is our daughter Charlotte’s favorite. It’s sweet with apples and brightened up by orange juice—perfect for a midwinter breakfast or snack!
Makes 1 loaf
1 3/4 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon kosher salt
2/3 cup orange juice
1/3 cup canola oil
2 cups coarsely chopped apples (skin on)
Preheat oven to 350 degrees. Lightly grease a 9 x 5 x 3 inch loaf pan.
In a large bowl, whisk together the flour, sugar, baking powder and kosher salt. In a separate bowl or measuring cup, combine orange juice, canola oil, and eggs, whisking until blended. Make a well in the center of the dry ingredients, and pour in the liquid ingredients. Stir together until just combined, making sure to scrape down the sides, but not to overmix the batter. Stir in the chopped apples and pour batter into the prepared loaf pan. Bake for 1 hour, or until a toothpick inserted in the center comes out clean. Let cool slightly before slicing.
