Last weekend we processed our 4 turkeys, 13 ducks, and 7 spent hens. It was a long day, as usual — the ducks were hard to pluck, the turkeys, big and strong, were a handful. The night before processing day we were frantically emptying and organizing our two chest freezers, desperately trying to make space for the new birds that would be filling them in short order. We had pulled the final turkey from last year out and had an amazing pre-thanksgiving turkey dinner Sunday night, and have been eating turkey leftovers all week. In the end, there was exactly enough room – although just barely. We’ve got cinder blocks sitting on top of the freezers holding them shut.
